From Self's November 2008 feature of Eat Healthy All Week, here is a tasty dessert recipe for pumpkin parfait.
Serves 1
INGREDIENTS
- 1/4 cup part-skim ricotta
- 2 tablespoons nonfat plain yogurt
- 2 tablespoons bittersweet chocolate chips, divided
- 1/2 teaspoon grated orange zest, divided
- 1/4 cup pumpkin puree
- 1 1/2 teaspoons orange juice concentrate
- 1 teaspoon
PREPARATION
Mix ricotta, yogurt, 1 tbsp chocolate chips and 1/4 tsp zest in a bowl. Combine pumpkin, concentrate and honey in another bowl. Spoon half of ricotta mixture into a parfait glass or bowl. Top with half of pumpkin mixture. Repeat. Top with remaining 1 tbsp chips and remaining 1/4 tsp zest. Serve immediately or refrigerate until needed.
