I've never been one for a fried egg sandwich, but I might try one one of these days. For those of you who like them, here's a recipe from Cosmopolitan.
When was the last time you had breakfast in bed? If you can't remember, then this Saturday's the time to make this yummy fried egg sandwich from Sara Perry's Everything Tastes Better With Bacon.
How to make it: Cook 4 thick bacon slices and 1/2 cup of cubed potatoes in a skillet until bacon is crisp and potato is golden brown. Transfer both to paper towels to drain. Break 2 eggs into the skillet, seasoning with salt and pepper, and fry only until whites are set. Set the eggs aside, then fry-toast the bread slices on one side. On a plate, layer toast, bacon, and egg; break the yolk, spread it around, then sprinkle potatoes over it and top with the other slice of toast. Makes two sandwiches.
