I am personally not a fan of eggs, but I stumbled over this recipe for Potato and Tomato Frittata at Katydid and Kid a while back and it intrigued me.
She writes:
My husband is quite fond of breakfast for dinner, though I often forget about this option, despite the deliciousness and simple elegance of omelettes.
